Wolfgang Puck’s contemporary steakhouse in the swanky Beverly Wilshire is a head-turner, full with gallery-like white partitions, John Baldessari artwork, and celebrity clientele—Eva Longoria, Jake Gyllenhaal, and Tom Cruise have all supped right here. But the Michelin-starred, Richard Meier–designed magnificence doesn’t crest alongside on seems alone. She’s severe about her steaks, grilled over wood and charcoal, then completed underneath a 1,200-degree broiler.
